Gluten Free Cranberry Jam Bars

Ingredients

  • 2 Cups Gluten free flour I used Bob’s Red Mill 1-to-1
  • 1/2 Cup Gluten Free Rolled Oats
  • 1/2 Cup Shredded coconut
  • 3/4 Cup white sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 Cup melted butter
  • 1 Large egg
  • 1 14 oz canned whole berry cranberry sauce I used ocean spray

Instructions

  1. Preheat oven to 350 degrees. Coat an 8x8 baking dish with shortening. Set aside.

  2. In a large mixing bowl (or kitchen aid) combine dry ingredients together: flour, oats, coconut, sugar, baking powder, and salt.

  3. Add butter and egg to dry mixture. Stir to combine.

  4. Press 1/2 of the dough into the bottom of your coated baking dish.

  5. Pour cranberry sauce on top of pressed dough. Spread an even layer on top of dough.

  6. Sprinkle the rest of the dough mixture over the top of the cranberry sauce.

  7. Bake in preheated oven for 25-30 minutes. Remove from oven and allow to cool completely. Cut into squares and enjoy!
