Dairy Free Mexican Corn Dip

Ingredients

  • 4 slices sugar-free bacon cooked and chopped
  • 2 cups frozen or fresh corn
  • 1/2 cup dairy free plain yogurt I used Kite Hill
  • 1/2 cup dairy free cream cheese I used Kite Hill
  • 4 ounces chopped green chilis
  • 1/2 cup mayonnaise I used Primal Kitchen's
  • 1 cup dairy free cheddar cheese I used Daiya's
  • 2 tbsp chopped green bell pepper
  • 2 tbsp scallions chopped
  • salt and pepper to taste

Instructions

  1. In a large skillet, cook bacon. Drain and chop into small pieces. Set aside.

  2. Cook corn according to package. Note: You could also grill corn-on-the-cob for an extra boost of flavor!). 

  3. In a large saucepan, combine corn, yogurt, cheese, chilis, mayo, and cheddar cheese. Stir until cheeses are melted and combined. Stir in bell pepper and scallions.

  4. Add salt and pepper to combination and stir to combine.

  5. Transfer to serving bowl. Sprinkle with bacon. Serve warm.
