Heat olive oil in large skillet or wok over medium heat.
Thinly slice chicken breasts and cook in oil for 3-4 minutes or until thoroughly cooked.
Add onions, carrots, garlic and ginger to pan. Stirfry for an additional 5 minutes or until veggies are tender.
Scramble egg with vegetables and add broccoli and spaghetti squash to chicken mixture.
Add coconut aminos, sesame oil, fish sauce, and coconut cream to wok and stir to combine. Heat through.
Sprinkle with salt and pepper, to taste. You can also top with some cilantro and/or scallions for additional color, if desired! Serve hot.
