Gluten Free Peanut Butter Blossoms

Ingredients

  • 1/4 C sugar
  • 1/4 C light brown sugar
  • 1/4 C smooth peanut butter The no-stir kind.
  • 1/4 C butter softened
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 C gluten free flour I used Bob's Red Mill 1-to-1
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 15 unwrapped Hershey's kisses
  • sanding sugar option

Instructions

  1. Preheat oven to 375 degrees

  2. Line a baking sheet with parchment and set aside

  3. Mix both sugars, peanut butter, regular butter, vanilla and egg together in a mixer until well combined.

  4. Add flour, baking soda, and baking powder to butter mixture. Stir to combine.

  5. Using a tablespoon or cookie baller, roll dough into balls.

  6. Roll into sanding sugar and place on cookie sheet.

  7. Bake for 8-10 minutes, until golden brown.

  8. Remove cookie sheet from oven and immediately press Hershey kisses into center of cookie. Cool cookies on cookie sheet for about 10 minutes. Enjoy!
