Cream Cheese Sugar Cookies

Gluten Free Cream Cheese Cookies

Ingredients

  • 2 cups gluten free flour blend I used Bob's Red Mill 1-to-1
  • 1/4 cup almond flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup sugar
  • 2 large eggs
  • 2 oz cream cheese softened
  • 10 tbsp butter softened
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/4 cup sprinkles of choice

Instructions

  1. In a large mixing bowl or Kitchenaid, mix flours, sugar, baking soda, and salt together.

  2. Add the rest of your ingredients to bowl (except for sprinkles). Stir to combine.

  3. Cover bowl and refrigerate for 1 hour.

  4. Preheat oven to 350 degrees.

  5. Line cookie sheet with silpat or parchment.

  6. Using a cookie scoop or soup spoon, roll tablespoon sized balls of cookie dough.

  7. Take each ball and roll in your sprinkles.

  8. Place dough on cookie sheet and press down slightly to flatten.

  9. Bake cookies 8-9 minutes or until lightly browned. Do not overbake!

  10. Remove from oven, transfer cookies to wire baking rack and cool.
