In a medium bowl, whisk dry ingredients together. This includes flour, baking powder, pumpkin pie spice, sugar, and salt.
Add egg and coconut milk to dry ingredients. Whish together.
Core peeled apples and slice apples into 1/4 inch rounds. You should now have doughnut looking rounds.
In a large pan, heat coconut oil over medium heat.
Dip apple slices into batter and fry in hot oil 3-4 minutes per side or until golden brown.
Remove from oil and drain on paper towels.
Sprinkle powdered sugar or pour maple syrup over top.
