Sauteed Root Veggies

Ingredients

  • 1 parsnip peeled and grated
  • 1 white sweet potato grated
  • 2 carrots peeled and grated
  • 1/4 head cabbage shredded
  • 1 large onion diced
  • 1/4 cup coconut aminos
  • 2 tbsp sesame oil
  • 1 tbsp minced garlic
  • 1/4 tsp fish oil
  • salt and pepper to taste

Instructions

  1. Heat sesame oil in large wok or skillet over medium high heat.

  2. Add parsnip, carrots,sweet potato, and onions to wok and stir fry 8-10 minutes until lightly browned. 

  3. Add garlic, coconut aminos, fish oil, and salt and pepper to pan. Toss to coat.

  4. Remove from heat and serve immediately.
