I love to make Christmas cookies from around the world. Our favorite time to travel as a family is during the holidays, just so we get to see how other people celebrate Christmas! It’s always so beautiful and unique. Like last year, we went to Italy and Austria and had the best time ever! Getting to see all of their events and walk around the Christmas markets was just glorious. I don’t think American holiday traditions will ever compare now. The food was just spectacular. Italian desserts, especially, are the best! So, that’s why I created this vegan and gluten free Italian wine cookies recipe. I just needed to relive my travels through food 🙂

The best part about cooking or baking with wine is you don’t need an expensive bottle! Heating wine burns off the alcohol anyway, so why waste your money? I used a cheap bottle of Trader Joe’s Two Buck Chardonnay in this recipe and it came out just fabulously. This is a super easy recipe to make, and uses just one bowl. Make sure you don’t overmix it, as it will get tough. Once the dough comes together, form it into 4-5 inch stubby ropes and bring the ends together. Dip them in baking sugar or Sweets & Treats Sprinkles like I did to give them a festive look! 

 

P.S. Don’t overbake them! They take a while to bake (for cookies, at least), but pull them out once the edges are just lightly browned.

Vegan Italian Wine Cookies

These vegan and gluten free cookies are sure to be a crowd pleaser!

Ingredients

  • 2 cups gluten free flour blend I used Bob's Red Mill 1-to-1
  • 1/4 cup cassava flour
  • 1/2 cup coconut sugar
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract I used Adams Extract
  • 1/2 tsp anise extract
  • 1/3 cup melted coconut oil
  • 1/2 cup dry white wine

Instructions

  1. Preheat oven to 350 degrees. Line cookie sheets with parchment or silpat baking sheets.

  2. In a mixing bowl or Kitchenaid, combine all dry ingredients (flours, sugar, salt, and baking powder).

  3. Whisk in extracts, oil, and white wine into dry ingredients.

  4. Transfer dough to floured, flat surface and knead a few times until dough is smooth.

  5. Form 3-4 inch stubby ropes with dough. Bring ends of rope together to form a wreath shape. Dip in sugar or sprinkles and place on cookie sheet.

  6. Bake in oven 20-25 minutes or until edges are lightly browned. Remove from oven and cool.
