Vegan Gluten Free Oreo Chocolate Pudding

I learned something new a couple of weeks ago. You don’t need gelatin to create a great pudding consistency! Did you know coconut cream will gel together all by itself?! It’s absolutely amazing! When I made this vegan gluten free oreo chocolate pudding, I really wasn’t sure how well it would turn out. I half expected it to be more of a chocolate soup. 🙂 But no! It came together in the most magical way.

Coconut cream makes a regular appearance in my house. I always have a can or two in my pantry! It brings a creaminess to so many dishes, like curries, smoothies, coffee, sauces, and pudding! I make both savory and sweet dishes with coconut, so it’s quite versatile. This easy recipe for oreo chocolate pudding is just one of the many recipes on my website that uses coconut cream. I usually use Trader Joe’s coconut cream (it’s the cheapest regularly priced can I’ve found) or Thai Kitchen’s coconut cream. I don’t tend to use coconut milk or lite coconut milk, because they’re not as potent. Definitely don’t use them in this recipe, as the pudding won’t gel together without the cream. I also think coconut cream is the better bang for your buck. Because of its thick consistency, you need less in most dishes.

Coconuts are a wonderful source of fiber, calcium, and potassium. They’ve got way less sugar than many other fruits and have high levels of electrolytes. I’m not a huge fan of raw coconut. Last year, in the Dominican Republic, I got a coconut that they drilled a hole in so you could drink the water in the center. Then, after you were finished, they’d split the coconut open for you so you could eat the meat. I was not a fan. My mom ate most of it. But any other form of coconut, sign me up! Shredded coconut, coconut oil, coconut butter? They’re all good! And I use them at least weekly! Coconut oil is a great hair mask and coconut butter is soothing for your skin.

Other than coconut cream, the other key ingredient in this recipe is cocoa powder. I used Divine Chocolates cocoa powder, and OMG! It’s amazing. It’s definitely a high quality cocoa powder and I wish I had an endless supply. Divine chocolates are all fair trade and the company is co-owned by cocoa farmers in Ghana. Vegan & Gluten Free Chocolate Oreo Pudding

Ingredients

  • 1 14-oz can coconut cream I used Thai Kitchen's. Do NOT use lite.
  • 1/2 cup Divine Chocolates 100% cocoa powder
  • 1/4 cup coconut sugar
  • 2 tsp pure vanilla extract
  • 1/2 cup crumbled gluten free oreos I used Glutino's (they're vegan too!)

Instructions

  1. In a small saucepan, heat coconut cream over low heat.

  2. Add in cocoa powder, sugar, and vanilla extract. Whisk to combine.

  3. Continue to whisk until pudding is simmering gently.

  4. Pour pudding mixture into a mixing bowl to cool. Refrigerate overnight for best results or at least 4 hours.

  5. Stir in oreo cookie pieces and serve. Enjoy!
