Spicy Sheetpan Crustless Quiche: A Hunger Action Recipe

September is Hunger Action Month. What is that, you might ask? Well, it’s a month where people stand together with Feeding America to fight hunger (feedingamerica.com 2019). Today, I’m joining with many of my fellow food bloggers to help bring awareness about the hunger crisis America experiences. To do this, we’re all contributing a recipe that costs less than $5.50 to make for a family of 4. So, here it goes. Introducing Spicy Sheetpan Crustless Quiche!

We were challenged to create a recipe for only $5.50, the average amount a family of 4 gets per meal on food stamps. This was one of the most challenging creations I ever set out to complete. In addition to the meal price, I also needed to come up with a gluten free meal that fit within my own food goals and sensitivities. I went through many recipe creation ideas, trying to come up with one that was within my budget restrictions and that would feed 4 on that budget! I always seemed to be between $.50-$1 over! But I finally figured it out and not only is this quiche delicious, it’s hearty and filling as well. It’s also a well-rounded meal and completely gluten free!

An easy Hunger Action Month recipe!

Our Hunger Action Month challenge also made us think about not buying large packages of something and dividing the cost. For instance, buying 5 lbs of ground beef for a discounted price and then dividing by 5 because we only used 1 lb in our recipe. Many families aren’t able to do that. They don’t have an extra $20 to buy large quantities because it’s a cheaper rate per pound. We also weren’t allowed to use coupons that weren’t readily available to the masses. As food bloggers, we’re often gifted products and high value coupons in order to promote products. But the average person, especially a person on food stamps, do not have access to these special “perks”.

I also tried not to include too many “pantry staples” without adding a cost to my list. Things like milk, eggs, oil, flour. Things many people would probably have in their pantries but a low income family may not. The only ingredients I used that are NOT included in my cost analysis is salt and pepper. And you could leave those out if necessary. 

So, here’s a rundown on my costs. I did find the mozzarella cheese on sale for $1 at Kroger but mozzarella is regularly available at my local Dollar Tree as well. Nothing else was on sale. These are my normal prices at the local grocery store.

  • 6 eggs: $1
  • 8 oz Chorizo: $1
  • Onion: $.44
  • 1 lb potatoes: $.69
  • Kale: $1
  • Mozzarella Cheese: $1 (on sale at Kroger) 
    • = $5.13 for 4 servings

Ingredients

  • 1 package chorizo
  • 2 medium potatoes thinly sliced
  • 1/2 medium onion chopped
  • 6 large eggs
  • 8 oz shredded mozzarella
  • 2 cups finely chopped kale
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees.

  2. In a small skillet, brown chorizo and set aside. Brown onions too and add to chorizo.

  3. Thinly slice potatoes by hand or use a mandolin. Lay potatoes in bottom of cookie sheet or baking dish of choice.

  4. Whip eggs with whisk and pour over potatoes.

  5. Top with chorizo, kale, onions, and cheese. Sprinkle with salt and pepper.

  6. Bake in oven for 20-30minutes or until eggs are set. Serve hot.

The meals below were made with a budget of $5.50 – the average amount a family of four would have for a meal on a SNAP budget. We’re sharing these recipes today to show you how far these dollars go – or don’t go – and to encourage you to donate to organizations addressing hunger issues.
