Have you ever had a major security hack on your website? Well, I sure did this week! And let me tell you, it’s no fun at all! It’s costly, both in time and money and there was real fear that I would lose everything on this site! I meant to get this post up a few days ago, but, #websitedown. It’s now Thursday and this recipe for Sheet Pan Honey-Garlic Turkey is just now available for your feasting pleasures! I will say, it’s totally worth the wait. My family has been raving about this meal all week. It’s definitely going on the list for a repeat very soon! Not only is it a one dish, throw-in-the-oven kind of meal (and who doesn’t love those on a busy weekday night?) but it’s the perfect blend of sweet and savory. Honey and garlic just go together, trust me on this.

Sheet pan meals

Sheet pan meals are the thing here at the Finnegan household this week, and that will probably continue through the next several days as we head out for vacation late next week. My work schedule is crazy and we’re coming off Spring Break in to a new term at the school I work for. So, first week of the new term + trying to cram 36 hours into 3 days? I’m sure you can picture the chaos!

Turkey in all forms (ground, bone-in, wings, etc) was majorly clearanced out at Sprouts the other day so I stocked up big time. I got two packages of 4 bone-in thighs for $1.50 each! I think sheet pan meals are better with bone-in meats. While they take a bit longer to cook, bone-in helps the meat retain more moisture. That way, you don’t get meat that’s dry and tough. But if you don’t love bone-in (my dad is not a fan), replace with some boneless breasts or thighs. Sheet Pan Honey-Garlic Turkey is a family friendly meal that makes great leftovers too so package some up to take to work with you!

Sheet Pan Honey-Garlic Turkey

Servings 4 people

Ingredients

  • 4 turkey thighs bone-in
  • 1/2 cup honey
  • 1/4 cup coconut sugar
  • 4 cloves garlic minced
  • 2 tbsp lemon juice
  • 2 tsp hot chili sauce or Sriracha
  • 2 tbsp coconut aminos
  • 1 large sweet potato diced
  • 1 large onion diced
  • 2 red potatoes diced
  • 2 cups baby carrots
  • 1 lemon sliced
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375 degrees

  2. In a small mixing bowl, stir honey, coconut sugar, garlic, lemon juice, chili sauce, and the coconut aminos together. 

  3. Place turkey thighs on a sheet pan and pour 1/2 the sauce over the top. Let sit and marinate as you prepare the vegetables.

  4. Chop sweet potato, onion, and red potatoes into 1 inch chunks. Place chopped veggies and carrots in a large mixing bowl. Pour olive oil over the top and toss.

  5. Place vegetables alongside turkey thighs. Pour additional sauce over the top of vegetables and top with lemon slices. 

  6. Bake in oven 30-40 minutes or until turkey thighs are cooked through. Baste with additional sauce as desired.
