I’ve been craving pancakes for a week now! But I’d run out of almond flour and right now, still being on the 21-day sugar detox, my pancake making ingredients are severely limited. But have no fear, Thrive Market to the rescue! My box of baking goodies arrived last night, with my almond flour intact. Woohoo! So I set my alarm 30 minutes earlier than usually this morning so I would have time to make some good, old-fashioned pancakes this morning! After much trial and error over the years, I’ve come up with a great Paleo pancake mix that works every time! I also love Against All Grain’s Banana Pancakes but sometimes a plain old pancake is what you need! Although, with a few modifications, Against All Grain’s pancakes are 21dsd compliant as well!

I topped mine with some almond butter and a few slices of banana this morning. I didn’t even miss the maple syrup! But don’t do what I did and add garlic flavored coconut oil to your mix! My Thrive Market order came with some free goodies, including a bottle of Nutiva coconut oil, which I thought “great! I’ll add that to my pancakes!”. It wasn’t until I started mixing the batter together and wondering what that weird smell was that I discovered the oil was garlic flavored! Had to start all over 🙁 Oh well. The garlic oil will be great in my stir-fry I’m making this evening!

Grain Free Pancakes

Makes 5-6 medium sized pancakes

1/2 cup Almond flour (not meal. Meal is too coarse)

1 T arrowroot flour

1 T coconut flour

1/4 tsp cream of tarter

1/2 tsp vanilla extract

1/2 tsp baking soda

1 egg

2 T coconut oil

1 T almond or coconut milk (either work fine)

1/4 tsp xanthan gum

2 T ghee or butter

  1. In a large skillet, melt butter over medium heat.
  2. In a small mixing bowl, combine all other ingredients together and whisk until smooth.
  3. Pour 1/8 cup batter onto preheated skillet. Cook for 4-5 minutes until set and lightly brown. Flip and cook an additional 2-3 minutes. Repeat using rest of the batter.
  • You can add chocolate chips, pecans, blueberries, whatever floats your boat, to this batter!
