One of my favorite holiday leftovers is mashed potatoes. Not just because I like them reheated (which I do, with tons of gravy!) but because I grew up making potato pancakes with those leftover potatoes! My dad and I went on several kicks where we’d make them multiple times in a month. I’m back into a potato pancake kick, probably because the holidays are approaching (where has the year gone?!). There will be plenty of potatoes floating around for the rest of the year! Our potato pancakes are basically just breadcrumbs, egg, onion, and garlic powder. Since going Paleo, I tweaked the recipe to bring you Paleo Potato Pancakes that taste just like the original recipe!

Paleo Potato Pancakes 

This recipe is incredibly quick and easy to make. Throw a few ingredients in a mixing bowl and fry them in some avocado oil, and they’re on the table in 20 minutes! We usually eat these for breakfast with sausage or bacon but I know many people who eat them more as a dinner side dish. An old family friend came to visit us from Russia and she made us Russian potato pancakes as a side dish to an early Thanksgiving dinner we had recently. 

I grew up with potato pancakes made from mashed potatoes but our Russian friend made them from shredded potatoes. Her recipe was just shredded potatoes (drained really well), salt, and egg whites. They had a very different texture than what I was used to but were still excellent! The potato pancakes I grew up with are more like the German version than the Russian, even though we lived in Russia for a while! My family usually puts ketchup on them (because we’re in American, people, and we like our ketchup!). You could also put sour cream or applesauce on top. Kite Hill’s plain Greek yogurt is excellent too if you’re staying away from dairy. That’s what I did for these photos. 

Try these Paleo potato pancakes whenever you have leftover potatoes you’re looking to use up! They’re a great alternative when you’re sick of just plain mashed potatoes! Paleo Potato Pancakes

Ingredients

  • 2 cups leftover mashed potatoes cold
  • 1/3 cup almond meal
  • 3 tbsp tapioca or arrowroot starch
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 sweet onion minced
  • salt and pepper to taste
  • avocado or similar oil, for frying

Instructions

  1. In a large skillet, heat oil over medium heat

  2. Combine all ingredients together in a mixing bowl. 

  3. Form patties with your hands, using about 1/4 cup of mixture per patty. 

  4. Fry patties in oil 4-5 minutes on each side, until patties are golden brown. 

  5. Remove from oil and drain on paper towels. Top with sour cream and additional salt and pepper as desired. Serve hot.
