No Bake Flourless Chocolate Oatmeal Cookies
Welcome to #ChristmasCookieWeek 2022! My absolutely favorite food event of the year (and the only one I’ve participated in this year 😂. Oops). Can you believe the holidays are upon us again? Wasn’t it just January last week? I seriously cannot believe the year is coming to an end. But this recipe for no bake flourless chocolate oatmeal cookies is sure to cheer you up and make you look forward to a week of delicious cookies. I guarantee you it will be the best week of the year so far.
These fudgy cookies are not only no-bake, they’re ready in one hour and are totally gluten free. Held together with peanut butter and even better, nutella! Well, actually I used the Lindt chocolate version that I picked up in Switzerland, though you can buy it on Amazon too: Lindt Hazelnut Milk Chocolate Spread. It’s a smoother, creamier version of Nutella. No offense, Nutella. I also used cocoa powder I got there too, so basically I went all out on the quality chocolate for these cookies!
The batter is super gooey and soft. You’ll need to set these in the refrigerator for 30 minutes or so. They freeze well too! Make a bunch now and keep them in the freezer till Christmas. Pull them out and defrost in the frig overnight. They’re perfect for a cookie exchange or Christmas party!
