No Bake Flourless Chocolate Oatmeal Cookies

Welcome to #ChristmasCookieWeek 2022! My absolutely favorite food event of the year (and the only one I’ve participated in this year 😂. Oops). Can you believe the holidays are upon us again? Wasn’t it just January last week? I seriously cannot believe the year is coming to an end. But this recipe for no bake flourless chocolate oatmeal cookies is sure to cheer you up and make you look forward to a week of delicious cookies. I guarantee you it will be the best week of the year so far.

These fudgy cookies are not only no-bake, they’re ready in one hour and are totally gluten free. Held together with peanut butter and even better, nutella! Well, actually I used the Lindt chocolate version that I picked up in Switzerland, though you can buy it on Amazon too: Lindt Hazelnut Milk Chocolate Spread. It’s a smoother, creamier version of Nutella.No offense, Nutella. I also used cocoa powder I got there too, so basically I went all out on the quality chocolate for these cookies! 
Batter for no-bake cookies

The batter is super gooey and soft. You’ll need to set these in the refrigerator for 30 minutes or so. They freeze well too! Make a bunch now and keep them in the freezer till Christmas. Pull them out and defrost in the frig overnight. They’re perfect for a cookie exchange or Christmas party!

No Bake Flourless Chocolate Oatmeal Cookies

These easy, ready in one hour, gluten free cookies are sure to be a hit at your next cookie exchange party this holiday season!

Ingredients

  • 1 Cup brown sugar
  • 4 tbsp butter
  • 1/4 Cup half-n-half
  • 1 1/2 Cup Gluten Free Certified Oats
  • 1 tbsp unsweetened cocoa powder
  • 1/4 Cup unsweetened coconut flakes
  • 1/4 Cup no-stir creamy peanut butter
  • 1/4 Cup chocolate hazelnut spread like Nutella
  • 1/2 cup finely chopped pecans or walnuts
  • 1 tsp vanilla
  • 1 tsp salt

Instructions

  1. Line a cookie sheet with parchment paper.

  2. In a saucepan, bring the sugar, butter, cocoa, and half-n-half to a rolling boil over medium heat. Let boil for 2 minutes or until temperature reaches 230 degrees with a candy thermometer.

  3. Remove from heat and add the rest of the ingredients. Stir to combine.

  4. Drop tablespoon sized cookies onto cookie sheet. Top with more coconut, if desired.

  5. Place in refrigerator for 30 minutes or until set. These can also be frozen!
