Gluten Free Vanilla Apple Fritters

Day two of Flavors of Fall and I’m submitting a Finnegan family favorite, Vanilla Apple Fritters, for your tasting review. 🙂 I’m currently sitting on a sunny beach with nothing like Fall-like temperatures, but that’s ok! I can dream of the cool, crisp weather I know is coming! And all the fall recipes that are a highlight of my year. Fall really is my favorite season! 🍂🍁🍂🍁

My mom was pretty strict about the amount and type of sugar we kids consumed while growing up. I’ve always been sensitive to sugar so she worked hard to replace regular white sugar with less refined options. Honey and maple syrup were regular substitutions in our house and they both shine in this recipe! With no white sugar, you could easily justify making these for breakfast on the regular! This recipe is also gluten free (of course) and dairy free. Use a coconut oil to fry in for a healthier option. Or try an air fryer! That would work too. Your kids are sure to love these doughnut looking apple fritters! 

Gluten Free Vanilla Apple Fritters

Ingredients

  • 1 cup gluten free flour blend I used Bob's Red Mill 1-to-1
  • 1/2 tsp baking powder
  • 1/2 tsp pumpkin pie spice
  • 1 tsp vanilla extract or paste I used Taylor & Colledge's vanilla paste
  • 2 tbsp coconut sugar Can substitute 1/4 cup honey, if desired
  • 1/2 tsp salt
  • 1 1/2 cups coconut milk
  • 1 large egg
  • 2 large apples peeled and sliced into rings
  • Coconut or vegetable oil for frying

Instructions

  1. In a medium bowl, whisk dry ingredients together. This includes flour, baking powder, pumpkin pie spice, sugar, and salt.

  2. Add egg and coconut milk to dry ingredients. Whish together.

  3. Core peeled apples and slice apples into 1/4 inch rounds. You should now have doughnut looking rounds.

  4. In a large pan, heat coconut oil over medium heat.

  5. Dip apple slices into batter and fry in hot oil 3-4 minutes per side or until golden brown.

  6. Remove from oil and drain on paper towels.

  7. Sprinkle powdered sugar or pour maple syrup over top.
