Gluten Free Lemon Lavender Icebox Cake

I grew up with a dessert called Icebox Cake. It’s one of my dad’s favorite desserts of all time and something his mom would make for him as a kid. That original recipe was basically just chocolate pudding, vanilla pudding, and layers of graham crackers. Over the years, we modified it by mixing in cool whip into the pudding to make it more of a mousse like consistency. We also would frost the top layer of graham crackers and decorate the top with walnuts. We love it! However, my dad is still not thrilled with our modifications. 😂
Gluten Free Lemon Lavender Icebox Cake
But I think this version is even better! It’s light, summery, and refreshing. Instead of layers of graham crackers, I made a graham cracker crust. But that’s only because I only had one box of graham crackers and it was enough to layer. 😉 Do as you see it. Layers or a crust, they’d both be delicious! I KNOW this recipe for gluten free lemon lavender icebox cake is sure to be a slam dunk!
Gluten Free Lemon Lavender Icebox Cake
An easy, no-bake cake featuring a creamy pudding filling and a graham cracker crust.
Ingredients
- 1 box gluten free graham crackers I used Pamela's
- 4 tbsp melted butter
- 2 3.4oz boxes lemon pudding mix
- 4 cups milk
- 1 tsp lavender extract I used Taylor & Colledge’s Lavender Paste
- 2 containers Cool Whip
- 3 large lemons I used seedless lemons from Melissa's produce
Instructions

Using a large mixing bowl, combine both pudding mixes, lavender extract and milk together. Whisk to combine.

Squeeze two of your lemons and add lemon juice to pudding mixture. Stir to combine.

Place pudding in refrigerator to soft set while you make the graham cracker crust.

In a food processor, combine graham crackers and melted butter together. Process until a fine crumb appears.

Place graham cracker mixture into the bottom of an 8x8 baking dish. Press into the bottom to form the crust.

Remove pudding mixture from refrigerator.

Stir in one of the containers of cool whip into the pudding. Pour pudding mixture on top of graham cracker crust.

Top with additional cool whip and sliced lemons for decoration.

Refrigerate for at least 2 hours. Enjoy!
