Dairy Free Iced Coconut Pumpkin Lattes

#Pumpkinweek continues with a spin on a popular drink! Did someone call for a dairy free PSL?! Did you know Starbucks’ pumpkin sauce isn’t dairy free? So even if you get coconut milk or their almond “drink” (that scares me that they call it a drink, instead of almond milk!), you’ll still be getting some dairy in your latte. Why not try my completely dairy free version instead! This recipe dairy free coconut pumpkin iced lattes also uses pure pumpkin purée, which gives you an extra burst of pumpkiny goodness. Try it iced or hot, they’re both delicious!

What do you think the secret to getting that perfect foam top without dairy is? It’s an immersion blender! Whipping it creates a gorgeous layer of foam! You can also throw it in the blender and whip it that way too, if you don’t have an immersion/hand blender. Whip it for 2-3 minutes, and you’ll create a delightful foam. You can also serve these hot if you want. I almost always prefer my coffee iced, but sometimes, in the dead of winter, you just need a good cup of steaming coffee! Either way you choose, they’re both delicious!

Dairy Free Coconut Pumpkin Iced Lattes

Dairy Free Coconut Pumpkin Iced Lattes

Ingredients

  • 3 cups strong brewed coffee any variety is fine
  • 2 cups coconut or almond milk I used Nutpods original
  • 1/2 cup coconut cream I used Trader Joe's canned
  • 1/4 cup pumpkin puree fresh or canned is fine
  • 2 tbsp coconut sugar
  • 2 tbsp Torani pumpkin spice syrup omit for Paleo
  • 1 tsp pumpkin pie spice blend
  • 1 tsp vanilla extract

Instructions

  1. Brew coffee as instructed. Cool overnight in refrigerator.

  2. Combine all ingredients in tall container (a pitcher works well). Using an immersion blender, whip 2-3 minutes until frothy.

    *If you don't have an immersion blender, pour everything into a regular blender and blend for 2-3 minutes.

  3. Pour over ice and top with coconut whipped cream (if desired).
