Coconut Curry Butternut Squash Soup

I spent yesterday in bed with a migraine, something that has become rarer for me since overhauling my diet last year. But I’ve been very bad with my diet this past month or so, especially with all the traveling I’ve done. So this week, and quite possibly long-term, I’m going to focus on anti-inflammatory recipes to help get my body back on track and kind of reset as we move forward into 2018. The two top things I’m really going to work on is upping my fiber intake to 25 grams a day and making sure I get 8 full servings of fruits and veggies per day. So, first up on my anti-inflammatory recipe list for you, a coconut curry butternut squash soup. Creamy and delicious, this recipe is SO good for you! I used chicken bone broth as my base to give it an extra anti-inflammatory punch but switch this for vegetable stock and you’ve got yourself a great vegan meal!

 

Coconut Curry Butternut Squash Soup

2 lbs butternut squash, halved and seeded

4 T olive oil

1 cup carrots, diced

1/2 cup celery, diced

1 small onion, diced

1 tsp curry powder

1/2 tsp turmeric

4 cloves garlic, minced

2 c chicken bone broth or vegetable stock

6 oz coconut milk

  1. Preheat oven to 350 degrees. In a baking dish pour 1 cup of water on the bottom. Set squash, face down, in pan and bake 45 minutes or until tender. Cool 10-15 minutes.
  2. Using a spoon, scoop the flesh of the squash out and place in a bowl until later.
  3. In a large stockpot, heat olive oil over medium heat. Add onions and carrots to oil and sauté 6-7 minutes until tender. Add garlic and celery and sauté an additional 2-3 minutes.
  4. Add all spices and broth to pot along with butternut squash. Stir to combine and simmer on low heat for 20-30 minutes or until carrots are soft.
  5. Using an immersion hand blender*, puree soup until smooth and no chunks remain. Stir in coconut milk and bring to a simmering boil. Serve hot.

*You can also use a blender or food processor if you don’t have an immersion blender.
