Are you tired of being house bound yet? I sure am and it’s only been 10 days of working from home for me! Are there any ways you’re trying to break up the monotony and boredom? We’re trying to do some themed dinners or restaurant copycat recipes lately. I’ve made a recipe for Famous Dave’s bbq pork sandwiches and tried a gluten free copycat for Pei Wei’s ginger chicken and broccoli. But one of our all time favorites is breakfast for dinner! Pancakes for dinner, what could be better? Especially these Gluten Free Apple Pie Pancakes. They really take pancakes to the next level.

Gluten free apple pie pancakes

 

These Gluten Free Apple Pie Pancakes are the best of both worlds. They’re breakfast AND dessert for dinner! What kid on Earth wouldn’t love that?! Or adult, to tell you the truth. We like those things too, you know! This recipe is super easy to make but just seems a little bit more gourmet, don’t you think? I think it feels a meal you’d eat at a fancy brunch place or at a hotel. But it really was super simple to create. A piece of cake, if you will 😉

You could use any pancake mix you’d like for this recipe. I used Trader Joe’s gluten free pancake and waffle mix but you don’t have to make them with a gluten free mix if you’re not a gluten free eater. Bisquick, Birch Benders, even Aunt Jemima! They’ll all work just fine. Whatever floats your boat. The apple pie topping is naturally gluten free. I didn’t add any special substitution ingredients to make it gluten free. This recipe really does work well for both food allergy sufferers and regular eater alike. It’s sure to be a hit with the whole family!

Gluten Free Apple Pie Pancakes

Ingredients

For the Pancakes

  • 3/4 cup gluten free pancake mix I used Trader Joe’s
  • 1 large egg
  • 2 tbsp melted butter
  • 1/2 cup almond or cashew milk
  • 1 large Granny Smith apple, diced small
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp Adam’s vanilla extract

For the apple topping

  • 2 large Granny Smith apples, sliced
  • 2 tbsp butter
  • 1/2 cup coconut sugar
  • 1/4 cup honey or maple syrup
  • 1 1/2 cup water
  • 2-3 tbsp butter (for skillet)

Instructions

  1. Heat a large skillet over medium heat. Melt butter in bottom of pan.

  2. Mix all pancake ingredients together.

  3. Pour 1/4 cup of batter in skillet. Cook 3-4 minutes or until golden brown. Flip over and cook an addition 2-3 minutes. Remove pancake from pan.

  4. Add more butter to pan and continue last step until all pancakes are made. Remove pancakes from heat.

For the apple sauce

  1. Heat a saucepan over medium low heat. Add water, sugar, honey, butter, and apples to pan.

  2. Simmer over medium heat for 10 minutes or unti sauce starts to thicken.

  3. Turn off heat.

  4. Stack pancakes and pour apple topping over the top. Serve hot.
