German Apple Strudel

Ingredients

  • 1 WeWalka pastry dough sheet Use Schar brand if gluten free
  • 1/2 cup walnuts
  • 1/4 cup raisins
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tbsp honey
  • 2 large Granny Smith apples cored, peeled, and diced
  • 1 tsp lemon juice
  • 2 tbsp coconut sugar
  • 2 tbsp coconut shortening for basting

Instructions

  1. Preheat oven to 425 degrees.

  2. Place pastry dough on parchment lined cookie sheet.

  3. In a large food processor, combine walnuts and raisins together. Pulse until loose, crumbly mix appears. 

  4. Add vanilla, almond extract, cinnamon, nutmeg, and honey to walnut mixture. Pulse a couple of more times to combine ingredients.

  5. In a small mixing bowl, toss diced apples in lemon juice and coconut sugar.

  6. Spread walnut mixture down the center of the puff pastry dough. Top with apples. 

  7. Score pastry dough into strips on both sides of apple/walnut filling. Criss-cross strips across the filling to form a braid pattern.

  8. Melt coconut shortening in microwave, about 30 seconds.

  9. With a pastry brush, baste shortening on top of puff pastry. This will help pastry dough shine when cooked!

  10. Bake in oven 30-40 minutes or until strudel is golden brown. Remove from oven and cool.

  11. Top with coconut whipped cream or dairy-free ice cream. Enjoy!
