Flourless Trail Mix Cookies

Ingredients

  • 1 c nut butter you can use peanut, almond, or cashew
  • 1 egg
  • 1 scoop collagen peptides I used Orgain's
  • 1 Tbsp vanilla extract
  • 1/2 c coconut sugar
  • 1/4 c chocolate chips
  • 1/4 c dried, unsweetened cranberries I used Made in Nature
  • 1/4 c finely chopped pecans or walnuts

Instructions

  1. Preheat oven to 350 degrees

  2. In a large mixing bowl, whisk egg till slightly frothy

  3. Add nut butter, vanilla, collagen, and coconut sugar to egg. Stir to combine.

  4. Fold in chocolate chips, cranberries, and nuts.

  5. Roll dough into tablespoon sized balls and place on cookie sheet

  6. Use a fork to make a criss-cross pattern in each ball of dough, flattening the dough as you go (these cookies don't spread much at all so form them into whatever shape you want before baking)

  7. Bake 8-10 minutes or until set and cookies are lightly brown. Remove from cookie sheet and cool completely. Enjoy!
