Paleo White Chocolate Pumpkin Mousse

Ingredients

  • 2 Cups Puréed pumpkin I used homemade so I’m not sure if canned will give the same texture
  • 2 Oz White chocolate, melted
  • 1 15 oz can Coconut cream NOT coconut milk
  • 1/4 cup Maple syrup
  • 2 Tbsp Pumpkin sprinkles

Instructions

  1. Blend first four ingredients together with a hand beater. You may need to add a touch of milk or water to smooth it out. It should have the consistency of a thick, fluffy mousse

  2. Fold in sprinkles gently with a spatula, by hand.

  3. Refrigerate 30 minutes to blend flavors and thicken mousse.

  4. With a piping bag, pipe mousse into chocolate cups or whatever serving dish you’re using. Sprinkle with additional Sprinkle Pop pumpkin sprinkles and serve.
