Here in Colorado Springs, we have this great restaurant called Modern Market, or ModMarket for short. They’re all about eating whole foods, foods that are free from preservatives and fillers, and are just better for you! One of my favorite dishes (besides their gluten-free pizzas) is their lemongrass pulled pork. It’s tender and flavorful without being bogged down by sticky, sweet sauces. And it’s perfect for your Whole30 goals this month! So I’ve done my best to recreate this dish for you guys! Introducing the Slow Cooker Lemongrass Pulled Pork!

I’m not a huge slow cooker fan. Yes, I can see why it’s handy. Who doesn’t like coming home after work to a fully cooked, hot meal? But there are only so many soups and stews one wants to eat! I just feel like most dishes cooked in the slow cooker end up tasting the same. Maybe I’m crazy. I do understand the Instant Pot craze though! Dinner in 30 minutes? Sign me up!

This dish could easily transfer to the Instant Pot if you don’t want to wait 6-8 hours for your pork to be done. I had a big boneless pork tenderloin that I used to create this dish but looking back, I might suggest you use a pork butt instead. Tenderloin is very low in fat and thus, was a bit drier than I would have liked. Pork butt would have given it a more juicy and moist texture. But in the end, I would probably just go with what’s on sale!

My Slow Cooker Lemongrass Pulled Pork paired really well with some rosemary sweet potatoes (which you can choose as a side at ModMarket as well) and homemade cole slaw. If you have trouble finding lemongrass, I would check a local Asian store. That’s where I found mine. Here’s what it looks like…

I think it kind of looks like stringy scallions, don’t you? I’ve also seen it at Whole Foods and a time or two, at Sprouts. It’s what makes this dish, so don’t skip it!

Slow Cooker Lemongrass Pulled Pork is a perfect meal-prep dish as it reheats beautifully. It’s also Paleo, Whole30, Keto and gluten-free. Instead of sweet potatoes like I did, pair it with some sauteed spinach or cauliflower to keep it low carb. It’s quite versatile! You could even get some hamburger buns and make some sandwiches. Although, that would not be very low-carb 😉 But it would be delicious!

Slow Cooker Lemongrass Pulled Pork

A Whole30 and Paleo approved rendition of Modern Market’s Lemongrass pork!

Ingredients

  • 2 lbs boneless pork butt or tenderloin
  • 2 stalks lemongrass bruised
  • 1 onion finely chopped
  • 4 cloves garlic finely chopped
  • 2 tsp fresh ginger grated
  • 2 tbsp fish sauce use Red Boat’s for Whole30
  • 1/4 cup rice wine vinegar
  • 1/4 cup coconut aminos
  • 3/4 cup beef stock

Instructions

  1. In a small mixing bowl, combine all ingredients except for pork. 

  2. Place pork butt in slow cooker and top with sauce.

  3. Cook on high for 5 hours or low for 8 hours or until pork shreds easily with a fork.

  4. In the slow cooker, shred pork with two forks or take an electric beater and break pork apart with it. Pork will absorb any extra liquid in the slow cooker. 

  5. Serve over vegetables or potatoes.
