Grain Free Singapore Street Noodles and a Giveaway!

I love PF Chang’s. It’s probably one of my favorite chain restaurants. I love that it has such a large gluten free menu (even though they took the flourless chocolate cake off the menu! ?). But my all time favorite dish there is the Hokkein Street Noodles. They changed the recipe a bit and renamed it from the Singapore Street Noodles last year but overall, it’s the same recipe and I love it to death! It’s even free right now when you purchase another entree if you’d like to try it! What’s better than free, right?!

But if you just can’t get to a PF Chang’s this holiday weekend, then try my copycat recipe! It’s so yummy and reheats like a dream, making for the best meal prep! I make huge batches of it over the weekend and eat it all week long! I never get tired of it. Switch it up with different vegetables or meats if you like. The original recipe has shrimp in it but I’m not a seafood fan so I don’t put that in. I think it also has pork in it too. Usually, I just make it with chicken unless I have some steak lying about. Whatever sounds good to you, throw it in! You could even make an all vegetarian dish and leave the meat out altogether if you’d like. It does have egg in it, so it’s not vegan.

Singapore Street Noodles

A grain free copycat of a PF Chang’s dish!

Ingredients

  • 6 Oz sweet potato starch noodles
  • 1 Cup baby carrots cut into slivers
  • 1 Cup red bell pepper sliced
  • 1 Cup cabbage shredded
  • 2 eggs
  • 1 Large onion minced
  • 4 Cloves garlic minced
  • 6 Oz chicken breast cooked and diced

For the sauce

  • 2 Tbsp Red curry powder
  • 4 Tbsp Oil
  • 1/2 Tsp Turmeric
  • 4 Tbsp Coconut aminos
  • 1 Tbsp Fish oil
  • 1 Tsp Sriracha sauce
  • 2 Tbsp Chopped scallions
  • Salt and pepper To taste

Instructions

  1. In a large wok or skillet, heat oil over medium heat

  2. Bring a large pot of water to a boil. Add noodles and cook 8 minutes until al dente. Drain and set aside.

  3. In wok, sauté vegetables and garlic for 10-12 minutes or until tender. Add egg and scramble together.

  4. Toss noodles in wok with vegetable mixture. 

  5. Chop chicken into bite sized pieces and stir into vegetable mixture.

  6. In a small mixing bowl, combine all sauce ingredients together. Add to noodles/vegetable mixture and toss to coat. 

  7. Adjust salt and pepper seasoning to taste. If too dry, add more water or coconut aminos. Top with chopped scallions and serve hot.
