I’m all about the sheet pan meals this week. Three different versions went down in my kitchen over the weekend, and they all featured turkey in some way! Why, you ask? Because turkey was hugely on sale at my local grocery store last week! I don’t know why, but I’m not complaining! So, I got creative and the first recipe I’m going to feature with my new-found affinity to all things turkey, is Sheet Pan Mini Turkey-Apple Meatloaves! Because, why not? 

We’re leaving on vacation next week and before I leave to go someplace, I usually try to empty out the refrigerator and freezer. Most definitely, getting rid of anything that won’t last over the week to 10 days that we’re usually gone is a priority. Because reducing the amount of food waste we tend to create has been a priority for me this year. It’s on my list of New Year’s goals.

So, this week, I’m wanting to use up all the potatoes, sweet potatoes, and onions I have in bins in the refrigerator. What better way to use up those root vegetables than in a bake? I also had a couple of green apples so in they went! Introducing, turkey-apple meatloaf! SO simple and easy, as all sheet-pan meals ought to be. These meatloaves are more like oversize meatballs 🙂

I basted the meatloaves with a sugar-free barbecue sauce from Primal Kitchen. I believe they’re one of the few bottled barbecue sauces on the market that are Whole30 approved. Oh, and by the way, this recipe is Whole30! Woohoo! Add this to your next Whole30 meal plan. It’s great for meal prep too. I packaged up three servings to take with me for lunches this week. These Sheet Pan Mini Turkey-Apple Meatloaves are sure to be a hit in your household!

Sheet Pan Mini Turkey-Apple Meatloaves

Whole30 and Paleo, this easy sheet pan meal will be on your table in 30 minutes!

Servings 4 people

Ingredients

  • 1 pound ground turkey
  • 1 sweet onion finely chopped
  • 1 green apple finely chopped
  • 1 egg
  • 1/2 cup bbq sauce divided: use Primal Kitchen for Whole30
  • 1/2 cup almond meal
  • 1/4 cup fresh parsley finely chopped
  • 1 tsp Italian seasoning mix
  • salt and pepper to taste
  • 3 cups baby carrots
  • 1 lb red potatoes quartered
  • 1 large onion chopped largely
  • 2 Tbsp olive oil

Instructions

  1. Preheat oven to 400 degrees.

  2. Combine turkey, onion, apple, egg, half the bbq sauce, almond meal, parsley, and Italian seasoning together in a large mixing bowl. Season with salt and pepper to taste.

  3. Shape turkey mixture into 1/2 cup sized meatloaves and place on a baking sheet.

  4. Toss quartered potatoes, baby carrots, and chopped onion with olive oil and salt and pepper (to taste). Spread around the meatloaves on the sheet pan.

  5. Baste meatloaves with additional barbecue sauce, as desired.

  6. Bake in oven for 30 minutes, stirring vegetables occasionally so they don't burn on one side.

  7. Remove from oven and serve with more barbecue sauce.
