Mexican Lettuce Wrap Burgers
We wrap up #summergrilling week today. Sad day, I know. But just because it’s the end of this themed week doesn’t mean the grilling will end, right?! We’re just beginning to feel the faint stirrings of summertime (unless you also reside in Colorado. In that case, we haven’t even felt the beginnings of spring, much less summer!). I’m sure though, that these Mexican Lettuce Wrap Burgers will inspire you to dust off the grill and start cooking!

While every one of the recipes I’ve shared with you this week have been gluten free (and mostly dairy free as well), I’ve not shared a Paleo recipe with you yet. So guess what? This one fits the bill! They’re gluten free, grain free, dairy free, Paleo, and Whole30! Woohoo! No matter what dietary restrictions you might be limited to, these burgers are for you! Bursting with flavor, these burgers are topped with grilled pineapple and avocado to give you a great balance of sweet and savory.
Mexican Lettuce Wrapped Burgers
I used Spice House’s Vulcan Fire spice blend to create these spicy (and delicious!) hamburgers. I also used BBQ Guys’ meat thermometer (I’m completely in love with this little gizmo!) to make sure my burgers came out perfectly! Tender and SO yummy, the Spice House seasoning blend gave it just the right amount of kick and the BBQ Guys’ meat thermometer made sure I pulled these hamburgers off the grill at just the right time! Mexican Lettuce Wrapped Burgers
- 1 lb ground beef
- 1 tsp Spice House Vulcan Fire blend
- 1 pineapple cored and sliced
- 1 avocado
- 1 red onion sliced
- 1/2 cup pico de gallo
- 1/2 tsp garlic powder
- salt and pepper
Preheat grill to 450 degrees
In a large mixing bowl, stir ground beef, Vulcan fire spice blend, salt and pepper together
Form 6 patties with the beef mixture. Sprinkle with additional Vulcan fire spices. Place on grill and grill 5-6 minutes each side.
While beef is cooking, mix avocado, garlic powder, and more salt and pepper. Set aside.
Also, slice fresh pineapple and place on grill to sear. After nicely blackened, remove from grill and set aside.
Place one patty on top of 2 leaves of lettuce. Top with pineapple, red onion, guacamole, and pico. Top with 2 more lettuce leaves. Serve immediately.
