I’ve been so bad about creating new recipes lately! And I wouldn’t even say it’s been a super busy summer at all! My parents moved in with me for a little while last week. They’re building a brand new home but it’s not quite done yet. Contractors! They can never stay on a schedule, right?! So it’s been a little crazy the last week or two getting ready for them, but before that? I have no excuse.

We’re going into a season of extreme business though, so I need to get on top of my game. I have a bunch of post drafts I need to finish in preparation of a season of high travel coming up. I’ll also be focusing more on travel and eating Paleo(ish) while traveling instead of recipe creation for a while. I hope you all love it! I know I’m super excited to be partnering with some major brands and writing about these amazing adventures we have coming up! In the next 6 months, my family has over a dozen countries on our travel list! Amazing, right?!

This recipe for Keto Teriyaki Beef was born out of a little desperation. I’m trying out a bit of Keto in the sense of focusing on low carb and upping my fat content. I’m hoping this will restart my weight loss over the next month before heading out on vacation! But I also needed a super easy recipe and one that would reheat well this week so I’d have enough for lunches for a few days. When you’ve got extra people in your tiny kitchen, you have to balance out who’s going to be in the kitchen when and get out as soon as possible! Last night, we were all in my kitchen, trying to empty the dishwasher and clean up from movie night. And let’s just say, it didn’t go so well! 😉 My kitchen just isn’t big enough! LOL

I love teriyaki but I’m sure you’d be surprised just how much sugar is in the traditional recipe! It’s loaded with it! So, I played around with a Paleo and Keto version of it last night and is it tasty! Served on a bed of Asian spinach, I don’t even miss the sugary sauce and rice! It reheats like a dream and the whole meal, which easily serves 4, cost me about $6. Budget friendly Paleo dishes are my favorite! This recipe for Keto Teriyaki Beef is sure to quickly become one of your favorite weeknight meals. 

Keto Teriyaki Beef

Ingredients

  • 4 tbsp coconut aminos
  • 1 tbsp minced garlic
  • 1 tsp minced ginger
  • 1/2 tsp fish sauce I used Red Boat
  • 1 tbsp sesame oil
  • 2 tbsp olive oil
  • 1/2 large onion, sliced
  • 1 bunch fresh spinach
  • 1/2 lb sirloin steak, thinly sliced
  • 1 tbsp sesame seeds
  • salt and pepper, to taste

Instructions

  1. Heat a large skillet or work over medium heat. Add olive oil to pan.

  2. Stir-fry spinach in olive oil 2-3 minutes until wilted. Set aside.

  3. Add sesame oil to pan. Saute onions and garlic over medium heat until cooked through and tender.

  4. Add beef to pan and stir-fry together with onion until meat is cooked through. 

  5. Combine coconut aminos, fish sauce, and 1/2 the sesame seeds and add to beef. Toss to combine. Add salt and pepper to taste.

  6. Serve teriyaki beef over spinach immediately. Cover and store leftovers in frig for up to 3 days.
