I grew up with a stay at home mom who was/is a fantastic cook! Probably why I love to be in kitchen as well. But I also have a few childhood friends whose mothers are also incredible cooks and have influenced my culinary skills as well. This recipe is one of those “borrowed” recipes. I grew up with it, because my best friend’s mother introduced me to it as a child. It’s so simple and versatile. I’ve baked it, slow cooked it, and grilled it. Just depends on how quickly you want to eat! Serve it on top of rice (that’s usually how we do it), mashed potatoes, cauliflower rice, whatever you’d like! This time, I served this dish with Trader Joe’s cauliflower stuffing. So colorful and low carb! You’ll be a hit with your family and friends with this dish!

Honey Baked Chicken

2 lbs bone-in chicken (use legs, a whole cut-up chicken, breasts, or whatever combination you’d like)

1/2 cup butter or ghee

1/4 cup honey

1 tsp curry powder

1 TB prepared yellow mustard

1/2 tsp salt

1. Lay chicken pieces in a baking dish. Preheat oven to 375 degrees.

2. In a microwavable cup, combine all ingredients and microwave until butter is melted.

3. Baste chicken in melted butter mixture and pour 1/2 the mixture on top.

4. Bake 50-60 minutes or until chicken is thoroughly cooked. Remove from heat and baste again with remaining butter. (side note: feel free to double the sauce recipe and serve on the side! I definitely do!)
