German Cucumber-Radish Salad

Oh, hey! You want another German salad recipe, right? Of course you do. Who wouldn’t?! 😉 Well, I’ve got a creamy, yet dairy-free cucumber salad for you today! So incredibly easy to make too! English cucumbers were on sale at my local health food store this past week, so I’ve got cucumbers coming out my ears! Seriously, I bought 6. 

Fresh dill was $.69 at the Asian store so I’ve been trying to experiment with different dishes this week where I could use the herb. I always like fresh herbs better than dried, don’t you? I ended up with 4 different salads which I brought to work to share with my team because I knew there was no way I was going to get through all these salads before they started to wilt! My team loves when I bring in goodies for them, even if they’re not on a Paleo diet like I am! This salad lasts a day or two in the frig before getting kind of limp but it’s so easy to throw together, I would just make what you want to eat in the moment and not try to use this salad as a meal prep item. It’s not a really good make-ahead kind of dish, unfortunately.

Ingredients
  1. 1 whole English cucumber, sliced
  2. 1 c radishes, sliced
  3. 1/2 cup Kite Hill Greek Plain yogurt (You can use any plain yogurt you'd like. Kite Hill is dairy free)
  4. 2 T fresh dill, minced
  5. 1 T apple cider vinegar
  6. 1 T coconut sugar
  7. 1/2 tsp salt
  8. 1/4 tsp black pepper
  9. 1/2 tsp Dijon mustard
Instructions
  1. In a large mixing bowl, combine yogurt, vinegar, mustard, and spices together.
  2. Add cucumbers and radishes, toss to coat with yogurt mixture. Season with more salt and pepper, to taste. Serve cold.
