Easy Pumpkin Coriander Soup

#Pumpkinweek is coming to an end but I’ve got one last recipe for you! Fall may not be in the air here today, but that’s not going to stop me from making ALL the soups! Completely gluten free and low on dairy, this easy pumpkin coriander soup is sure to become a favorite! Bursting with flavors like coriander, cumin, and a hint of spice, it just looks like a fall soup too, doesn’t it?!

I found these gorgeous heirloom carrots at Sprouts the other day that just screamed fall to me. They were deep purple, bright orange, and muted yellow in color. Mixed together, they made such a delightful color contrast! I knew I had to add them to my soup! The purple carrot also decorated the top of my soup bowl in the photos. Isn’t it just gorgeous! Don’t feel like you have to use heirloom carrots too. If you can’t find them or they’re too expensive, feel free to use regular orange carrots. The heirloom carrots didn’t have a different flavor profile in any way, when compared to regular. They were just decorative 🙂

Pumpkin Coriander Soup

Ingredients

  • 2 tbsp olive oil
  • 2 small carrots diced finely
  • 1 large onion minced
  • 2 cloves garlic minced
  • 2 cups canned or fresh pumpkin puree
  • 3 cups chicken stock
  • 1 tbsp ground coriander
  • 2 tsp ground cumin
  • 1 tbsp paprika
  • 1 tsp ground cinnamon
  • salt and pepper to taste
  • 1 can coconut cream
  • 1 handful cilantro finely chopped
  • 1/4 cup shredded Cabot cheese

Instructions

  1. In a large saucepan, heat olive oil over medium heat.

  2. Add carrots, onions, and garlic to oil and saute 8-10 minutes until tender.

  3. Add pumpkin puree and chicken stock to vegetable mixture. Add spices and stir to combine.

  4. Simmer over low heat 20 minutes or until carrots are mushy.

  5. Remove soup from heat and using an immersion blender, blend to combine vegetables.

  6. Add coconut cream last. Top with cilantro and cheese. Serve hot.
