I’m a HUGE Mexican food fan. If I had to eat one type of food for the rest of my life, it would be tacos, hands down. Love, love, love them and some form of tacos is on the menu at least twice a month. I may or may not have had Mexican food three times this week alone. But hey, Cinco de Mayo was just a couple of days ago, right? Because of my love for all things Mexican, not only are we showcasing recipes perfect for those summer barbecues this week here on the blog, but we’ll also be celebrating Mexican food with all of my recipes having a Mexico flair to them. Because I just can’t get enough. First up, this totally scrumptious Dairy-Free Mexican Corn Dip.

Dairy Free Mexican Corn Dip

I served these with my dip at a belated Easter celebration a couple of weeks ago and were they a hit! Let’s just say, my entire case, all 12 bags, are gone now. Yup, gone in one night! Probably a good thing. They’re no longer in my house, tempting me! LOL! This dairy-free Mexican corn dip paired so well with the jalapeno corn crisps.  I made the dip fairly mild for certain little tastebuds who don’t handle spice very well, so the jalapeno crisps added just the right amount of heat to this otherwise kid-friendly dip! The kids who weren’t digging spicy liked the dip with the original crisps. For those of us who couldn’t eat these wonderful crisps (sigh…) we really enjoyed sweet plantain chips and cucumber slices! This dip itself is gluten and dairy free! It’s the perfect starter for all your backyard barbecues this summer!

Dairy Free Mexican Corn Dip

Ingredients

  • 4 slices sugar-free bacon cooked and chopped
  • 2 cups frozen or fresh corn
  • 1/2 cup dairy free plain yogurt I used Kite Hill
  • 1/2 cup dairy free cream cheese I used Kite Hill
  • 4 ounces chopped green chilis
  • 1/2 cup mayonnaise I used Primal Kitchen's
  • 1 cup dairy free cheddar cheese I used Daiya's
  • 2 tbsp chopped green bell pepper
  • 2 tbsp scallions chopped
  • salt and pepper to taste

Instructions

  1. In a large skillet, cook bacon. Drain and chop into small pieces. Set aside.

  2. Cook corn according to package. Note: You could also grill corn-on-the-cob for an extra boost of flavor!). 

  3. In a large saucepan, combine corn, yogurt, cheese, chilis, mayo, and cheddar cheese. Stir until cheeses are melted and combined. Stir in bell pepper and scallions.

  4. Add salt and pepper to combination and stir to combine.

  5. Transfer to serving bowl. Sprinkle with bacon. Serve warm.
